The place looks and sounds lovely but (to me, anyway) leaning on licensed international cuisine factories detracts from the sense that you’re truly in Venice, or even Italy.
Regarding your point about restaurants, I agree with you 100%. But I think that’s also why Airelles generally deserves credit. Yes, when we stayed, the options were more “international,” but the upcoming restaurant isn’t part of a chain.
